Koval, the Black Sheep of American Whiskey from Chicago produce a range of (whiskey)spirits, amongst which we can find one created from four grains. As with all their products, this has been bottled from a single barrel, from cereals purchased from Organic farmers.
Nose: sweet, ripe berries and cherries, a lot of vanilla and a touch of wood
Palate: that same touch of vanilla and wood as the nose brings, together with loads of sweetness. Honey and a creamy warm cherry pie with a touch of herbs and spices. Sage and cinnamon come to mind here, but only after swirling it around the palate for a while
Finish: a medium long finish, with warm cherry pie and those notes of woody, sweet vanilla
Conclusion: a very nice and balanced result of the combined effort the organic oats, barley, rye and wheat put together.
