Nose: spicy, bay leaves, herbs, dill, samphire, slightly sweet, liquorice, smoked salmon (what?!)
Palate: sweet, honeycomb, spicy, star anise, cloves, herbs, bay leaves
Finish: medium long (sadly), sweet, thin honey, hints of oak
Conclusion: Very nice. Hints of spices and quite a bite. I wouldn’t mind stumbling into a bottle of this at some point or try the other spirits of the brand. Not overly outspoken in one particular flavour or all over the place with just too many, but a modest, good example of what a bourbon can be.
